I was craving Schlotzskys

I have had a craving for a schlotzskys sandwich lately.  The closest one is about 45 minutes away, so I finally broke down and made some fake schlotzskys bread.   It’s very easy, and VERY tasty.    I topped it with ham and cheese, toasted it, added a few onions and other goodies and ta da!  It was the perfect dinner sandwich.

Here is my recipe:

In small bowl stir to disolve

1/2 c warm water

1 tablespoon sugar

2 1/4 teaspoon yeast

In Large Bowl Mix

1/4 teaspoon baking soda

1   1/2 teaspoon warm water

Add To Large Bowl

3/4 cup warm milk

1/2 teaspoon salt

1 cup flour

Beat with wire whisk

Add yeast mixture and 1  1/2 cups flour

Spray small baking dishes with cooking spray (I use 5  dishes that are approx 5″ across)  sprinkle a little cornmeal in the bottom of the dishes.    Divide dough into dishes, spray tops with a tiny bit of cooking spray, cover and let rise about 1 hour.   Spray one more time and bake.  (mine are shiny because I forgot this and sprayed after the fact..oops!)

Bake at 375 for 20 minutes. 

I like to slice and toast them and then make my sandwich.  Enjoy!
