An afternoon trip to IKEA turned into an evening of cookies for dinner!    Of all the wonderful things in the store, my hubby was drooling over  their oatmeal crisp cookies.     I broke down and baked some for him this evening.   I chose a random recipe from an online site.   It was a winner.  Ummmm, with a tall ice cold glass of milk, they were delicious!  Here is the recipe, wish I had a name to credit, but couldn’t find one.

  • 1 cup soft butter
  • 1 cup firmly packed brown sugar
  • 1 cup white sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1-1/2 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 cups Old Fashioned Oatmeal (not quick cook)
  • 1-1/2 to 2 cups raisins

  1. Preheat oven to 350
  2. Grease or spray cooking sheets generously
  3. Cream butter and 2 sugars until fluffy
  4. Stir in vanilla then add eggs one at a time beating well after each add
  5. Sift flour, salt & baking soda together
  6. Add to creamed mixture
  7. Stir in oatmeal and raisins (may need to mix by hand, I do)
  8. Drop by rounded teaspoons 2″ apart ( do not crowd they do spread) on to greased sheets
  9. Bake for 10-15 minutes only DO NOT OVERBAKE, (they will burn and are too crispy)
  10. Cool 1 minute on sheet before removing to racks to cool completely
  11. ENJOY!!
